Easy Granola Bars

This week's "What's Cooking?" challenge is sweetened condensed milk! This has been a really busy week with hockey games almost every night, so there wasn't a lot of time for cooking. This recipe is quick and easy, with the added bonus of being a good on-the-go snack.

Easy Granola Bars

Click the name for the original recipe. It's easy to customize the recipe to suit your tastes. We made some changes based on ingredients we already had. Here is our version:

  • 3 cups quick-cooking oats
  • 1 (14 ounce) can sweetened condensed milk
  • 2 tablespoons butter, melted
  • 1 cup flaked coconut
  • 1 cup chopped almonds
  • 1/2 cup dried dates
  • 1/2 cup dried pomegranates

Preheat oven to 350 degrees F. Grease a 9x13 inch pan.
In a large bowl, mix together the oats, sweetened condensed milk, butter, coconut, almonds, dates, and pomegranates with your hands until well blended. Press flat into the prepared pan.
Bake for 20 to 25 minutes, depending on how crunchy you want them. Lightly browned just around the edges will give you moist, chewy bars. Let cool for 5 minutes, cut into squares then let cool completely before serving.
